Saving Time Cooking

This recipe I stole, ummm, borrowed from my friend Pam. Thanks Pam! She brought it to us after I had Jake and we just had to have the recipe!

Chicken Enchiladas

6-8 chicken breasts
1 Jar hot salsa
1 package flour tortillas
1 16oz container of sour cream
2 cans cream of chicken soup
1 small can chopped green chilies
2 C shredded Monterrey Jack/Colby cheese mix

Put the chicken and salsa in the crock pot on low. Let it cook until chicken breasts are cooked and easily shredded (usually about 8 hours, you can cook them all day or overnight). When chicken is cooked, put 1/2 shredded chicken into a freezer bag or other freezer storage container (I'll tell you why later).

Mix sour cream, soup, chilies and 1 C cheese in sauce pan until warm. Place the remaining 1/2 shredded chicken into tortillas and roll, line them up in a pan (I use 9x13) roll side down, repeat until pan is full or you run out of tortillas or chicken. Pour mixture from sauce pan over the lined up tortillas. Sprinkle remaining cheese over and cover with foil. Bake at 350 until hot and bubbly or place in fridge or freezer until needed.

Okay, Pam uses fat free, low carb soft tacos, I use normal, filled with bad stuff, burritos. So, use whatever you want. You can use everything else low fat or fat free if you want. It still works!

I doubled the chicken and salsa part of this recipe when I started making it because you now have enough seasoned, cooked, shredded chicken to make chicken tacos. Place in a freezer bag and use it at will. 2 meals at once! I usually just use a bag of frozen chicken breasts, they are 4lb bags. You will want to let them thaw before using them in the crock pot, otherwise the salsa will be really runny and the chicken won't have as much flavor (I know that, now). The hot salsa does not make the enchiladas hot, I promise. I don't do hot. At all. I don't even do mild salsa because it is too hot for me. After cooking for hours the salsa looses it's hotness. I'm not sure that was a word, but that's the truth.

Chicken Tacos

1/2 Shredded Chicken left over from Chicken Enchiladas
Taco shells, hard or soft
Shredded Cheese
Any other toppings you want: sour cream, lettuce, tomatoes, whatever you like

Heat chicken. Build your taco. Enjoy!

Saving Money at Target

Do you like Kashi Cereal? If so, do I have a deal for you! Kashi Cereal is 4/$11 this week at Target. If you buy 4 boxes, you get a $5 Target Gift Card. Use the printable coupon here to get $2 off any Kashi product or the printable coupon here for $1 off any Kashi Go Lean Crunch. You should be able to print both of these coupons out 2 times per computer. Say you only have 1 computer, your deal would look like this:

Buy:
2 boxes any Kashi
2 boxes Kashi Go Lean Crunch
Total= $11
Use
2 $2 any Kashi coupons
2 $1 Kashi Go Lean Crunch coupons
Total now=$5
Get a $5 Gift Card

Now, by my math, that equals free cereal. Again, my husband is accusing me of doing "fuzzy mathematics" but we will ignore him for now. If you use the gift cards that you got from buying PopTarts last week, there is no initial investment. Have more computers? Keep doing the deal until you run out of coupons.

Are you a member of Vocal Point? If you are then last week your probably received an entire envelope of Kashi cereal coupons. Use them to your advantage! If you aren't on the Vocal Point mailing list, sign up! You get free stuff and coupons from them. I like free stuff and coupons, don't you?

Saving Money at Meijer

I keep seeing new deals at Meijer and I thought I would let you guys all know about the great stuff I am reading. There is an AMAZING deal on Powerade, it gets kinda complicated because of all the different ways you can do this deal, but stick with me and I will break everything down for you. Thanks to moonflower on Hot Coupon World for initially bring this to my attention.

Easy
Powerade is on sale for $.59 a piece. If you buy 6 Powerade Zeros you will get a $4 Catalina to use at Meijer on your next order. 6x.59=$3.54. Spent $3.54 up front and then you can use the $4 Catalina to buy 6 more Powerade Zeros. Rinse and Repeat until you have enough drinks to make you happy.

Easy + 1
Buy 6 Powerade Zeros as listed above but use the $.75 or $1 coupons found in the 6/7 or 7/13 Smart Source. That will take the price of your initial investment down.

Getting Harder
If you buy 10 Glaceau Vitamin Waters (on sale 10/$10) you get 5 Powerades for free. There are tearpads out there for $1/1 Vitamin Waters. Should you be lucky enough to find these tearpads (send me some if you do, please) and you take 10 coupons, you can get 10 Vitamin Waters, 5 Powerade Zeros and a $3 OYNO (on your next order) coupon for FREE.

Genius Level Couponer
Use these coupons in any combination you want to:
- $.75 or $1 off Powerade
- $1 off Glaceau Vitamin Water
- Buy 2 Get 1 Free on Powerade or Vitamin Water (8/24 Smart Source)

Don't forget that Powerade is a Coke product, meaning you can get $10 off a pair of athletic shoes!

This is limit 1 per transaction, so you can do it more than once, just not more than once at a time. Anyway you go, this is a great deal. Kroger is also doing the OYNO Catalina on Powerade Zeros, they just aren't doing the addition of the Vitamin Water.

Question? Leave a comment or e-mail me, I'm here to help you save!
